No, this has nothing to do with the taskbar.
I would like a running application to NOT show at all on command. This is a normal function on a Mac, so I'd hoped there is an equivalent in Windows. It would be similar to minimizing however when in full screen mode, there is no way to minimize. I would have to change into windowed mode each time which is very inconvenient.

I understand, on Windows the fastest way to minimize an application running in full screen would be with Alt + Tab to return to the desktop or to another application holding Alt and clicking Tab until the desired application, or simply configure the application in question to be run in window mode.
